"Mousy Taste" is an alteration that has been described for a very long time, rarely observed in the field, but which has been on the increase in various French and international wine regions for the last 4-5 years. The mousy taste is a particularly unpleasant defect (odour emanating from rodent cages or from grilled food) which alters the quality of wine.
We will explain the reasons for this resurgence and the research currently underway in the Loire Valley and Centre regions.
